Karfiol mit Butter und Bröseln

Zubereitung
- Für den Karfiol mit Butter und Brösel die Blätter vom Strunk lösen und holzige Strunkteile entfernen. Karfiol gut unter fließendem Wasser waschen oder am besten eine gute halbe Stunde in kaltes Wasser legen. Karfiol in einen großen Topf setzen und so viel Wasser zugießen, dass der Karfiol etwa zur Hälfte davon bedeckt ist (der Karfiol bleibt so knackiger, er kann aber auch ganz in Wasser gekocht werden). Wasser salzen, Deckel aufsetzen und aufkochen lassen. Karfiol je nach Größe und gewünschter Knackigkeit ca. 15 Minuten bissfest garen.
- Inzwischen Butter langsam bei milder Hitze schmelzen lassen. Brösel einrühren und unter wiederholtem Rühren nicht zu rasant hellbraun rösten. Nach Belieben abschließend gehackte Petersilie einrühren und mitrösten. Mit Salz und einer kleinen Prise Muskatnuss würzen. Gegarten Karfiol herausheben, halbieren und auf vorgewärmten Tellern anrichten. Mit den Butterbröseln bestreuen und auftragen. Dazu passen gekochte Erdäpfel.
Tipp
Man kann den Karfiol vor dem Kochen auch in Röschen teilen und diese dann etwas kürzer garen.
