Zubereitung
- Den Spargel sorgfältig schälen, die holzigen Teile entfernen und 2 Liter Wasser mit Salz, Zucker und Butter aufkochen. Spargel einlegen und bei 95 °C 10 Minuten kochen. Spargel herausheben, in den kochenden, leicht gesalzenen Süßrahm geben und darin ca. weitere 10 Minuten abermals bei 95 °C ziehen lassen. Sobald der Spargel gar ist, herausheben und warm stellen. Den Süßrahm um die Hälfte einreduzieren (einkochen) lassen. Mit Salz, geriebener Muskatnuss, Pfeffer aus der Mühle, etwas Zitronensaft und geriebener Zitronenschale abschmecken. Wenig Stärkemehl mit wenig Wasser glattrühren und die Sauce damit leicht eindicken. Den Spargel anrichten und mit der fertigen Sauce begießen.
Tipp
Salz- oder Petersilerdäpfel als Beilage.
1 Liter Schlagobers finde ich zu viel. Da brauche ich ja keinen "gesunden" Spargel essen. Mache ich lieber mit 0,25 l Schlagobers und 0,25 l Sauerrahm.
