Sacher rolls with mushroom and tafelspitz spread

Portionen: 20

  • 20 pieces Baguette-like rolles
  • 250 g Tafelspitz (boiled round of beef, smoked)
  • Bresaola
  • Beef (dry-salted or prosciutto)
  • 100 g Mushrooms
  • 40 ml Olive oil
  • 125 g Curd cheese (with 20% fat)
  • 125 g Gervais (cream cheese)
  • 1 Tbsp Chives (chopped)
  • 1 pinch Ground caraway seeds
  • Salt
  • Pepper
  • 1 sprig Thyme (and rosemary)

Slice mushrooms finely and sauté in hot oil with thyme, rosemary, salt, pepper until all liquid has evaporated. Remove herbs and let the mushrooms cool. Dice the smoked meat. Purée all the ingredients in a blender, and season to taste. Slice the rolls lengthways leaving the halves connected
and open enough to apply the spread. Put themixture in a pastry bag with a smooth nozzle and squeeze into the opening. Add optional garnish.
