Viennese herring salad
Slice mushrooms finely and sauté in hot oil with thyme, rosemary, salt, pepper until all liquid has evaporated. Remove herbs and let the mushrooms cool. Dice the smoked meat. Purée all the ingredients in a blender, and season to taste. Slice the rolls lengthways leaving the halves connected
and open enough to apply the spread. Put themixture in a pastry bag with a smooth nozzle and squeeze into the opening. Add optional garnish.
