Buchteln (Baked yeast buns) with vanilla sauce à la Sacher

Preheat oven to 120°C. Press garlic, mix into a paste with caraway seed and salt. Rub the roast generously with this mixture. Put the roast into a baking pan and roast in the oven for 3 hours and baste occasionally with appearing meat juices. Additionally switch the grill on 10 minutes before it is finished and increase the temperature to 180°C, so that the roast gets a crispy crust.
Serve with the meat juice ("Bratlfett'n") - which when cold is spread onto brown bread -, bread dumplings and stewed cabbage ("warm cabbage salad").
